Biondi-Santi is the winery that created Brunello di Montalcino, and its Riserva was first produced in 1888, the parent vintage of the entire appellation. Since then, Biondi-Santi has released the Riserva only 41 times, in particularly exceptional vintages. The climatic trend of 1983, characterized by a spring with frequent rains and a dry and hot summer, allowed the grapes to ripen well, although early than average. The sensation of freshness given by the acidity reminds us that it is always full of life. It is perfect when paired with aged cheeses or as a "treat" at the end of dinner in companionship with a good cigar. This wine was refilled in 2000, a procedure that takes place exclusively at the winery. This rite involves the addition of a small amount of wine of the usual vintage, so as not to alter the organoleptic characteristics of the wine. This is followed by the replacement of the cork.
